I have made this lots of times. It's good with garlic bread (regular whole wheat sliced bread, toasted in toaster, butter, garlic powder)

5-6 potatoes, peeled and cubed
a small onion, chopped into small pieces

cook in chicken broth until the potatoes are really soft/mushy

blend up about half the potatoes with a mixer right in the pot

add 1/2 and 1/2 or whole milk
add shredded cheddar cheese and cook until all is melted

It's a yummy hug for your taste buds. Enjoy!!
