Just over the past few days I have been eating a lot of Waldorf salads of Fawlty towers fame. It is enjoyable, healthy and nutritious. It has walnuts in it which means I can't have when Jackie is about as she is allergic to nuts, but I can have it at other times. Here it is:-
12 green grapes 12 red grapes 2 tangerines,peeled and segmented a banana, chopped an apple cored and chopped 2 oz walnuts 125ml natural yogurt a tea spoon of honey a little bit of celery or lettuce (optional)
chop them up and mix in a bowl and hey presto a Waldorf salad.

It is from the aforementioned Low fat cookbook. I am going to have to look it up some more. The yogurt is low fat by the way.
